Trisha Yearwood's Southern blueberry-lemon bread (healthier version)


This is a nice, easy recipe I borrowed from one of my favorite cooking icons, Trisha Yearwood, country singer ("She's in Love with the Boy") and renowned Southern chef. Southern blueberry-lemon bread is a super-tasty treat, for breakfast or as a healthier dessert. It's a wonderful indulgence to enjoy from time to time, especially around the holidays. I substituted a few ingredients to make a little healthier version.

What you will need:

1 1/2 cup gluten-free flour 1 tsp baking powder 1 tsp salt

The zest and juice of 1 organic lemon ( I used our own from the backyard)

5 tbsp coconut oil, melted (substitute for butter) 1 tsp ginger

1 cup coconut sugar 1/2 cup coconut milk 2 eggs or egg substitute

1 cup blueberries plus 2 tbsp gluten-free flour

a dash of cinnamon sugar (substitute for sweet glaze)

Optional: 1/2 cup chopped pecans

Fun Fact: Lemons contain unique flavonoid phytonutrients which have powerful antioxidant properties and promote a healthy heart. They are also an excellent source of Vitamin C, the primary water-soluble antioxidant in the body. Lemons were so highly prized during the California Gold Rush for preventing scurvy that people were willing to pay up to $1/lemon. An especially steep price back in 1849.

Instructions:

1) Preheat oven to 350 degrees. LIghtly grease deep 5x10 baking dish w/ coconut oil

2) Remove the zest of 1 lemon. Assemble dry ingredients.

3) In a high-speed mixer, stir coconut oil, lemon juice, sugar, milk, eggs.

4) Slowly add dry ingredients, 1/3 at a time.

5) Fold in blueberries and pecans.

6) Pour into pan, sprinkle w/ cinnamon sugar.

7) Bake for about 1 hour.

Fun fact: Trisha Yearwood is also married to Garth Brooks. I have no idea who that is, but he sounds famous . . .

Yum, yum, yum, delicioso. The yumminess of this special bread is indescribable. And making it is easy, peasy, lemon squeezy. Bon appetit!
